Ingredients:
•sweet potato
•olive oil
Instructions:
1. Slice your sweet potatoes thin, carefully, with a sharp knife.
2. Spread them out on a baking sheet and brush lightly with olive oil. Sprinkle with sea salt (I also like to add a little salt-free cajun seasoning). Try not to let them overlap too much, or they won't crisp evenly.
3. Bake, flipping once, at 400 degrees until centers are soft and edges are crisp... about 20-30 minutes, depending on how thin your slices are.
They're great fresh, but just as good at room temperature in a ziplock bag in your lunch the next day!
