2-Ingredient Muffins

Didn't think this would work, but I tried the recipe - love, love, love it - it works, plus the taste & texture are amazing

The average calorie count for one piece of devils food chocolate cake (made w/ eggs & oil) is about 270 calories & 14 grams of fat. These 2-ingredient muffins average 130 calories & 3 grams of fat

If you haven't checked the nutrition facts on canned pumpkin - here you go: On average, 1 serving size (about 1/2 Cup) of canned pumpkin has only 40 calories, .05g of fat, no saturated fat, no monounsaturated fat, no polyunsaturated fat and no trans fat. It's low in sodium, no cholesterol, 9 gram of Carbs (but 5 grams of Dietary Fiber kind of cancels out 5 grams of the carbs) and only 4 grams of sugar. And last, but not least, throw in 2 grams of protein & a lot of Vitamin A

This whole quest was inspried by the book I mentioned earlier "The Hungry Girl" and after googling it, I found many, many more ideas. Here you go:

Example #1: Chocolate Muffins

* 1 Box Devils Food Chocolate Cake Mix
* 1 Can Pumpkin

What to do:
* Mix dry cake mix & pumpkin together until smooth (will be very thick)
* Pour into greased cupcake pan (either mini, 12 or 6 mammoth)
* Bake @ 350 degrees for approximately 25 minutes (keep checking them)
* Note: you don't taste the pumpkin - just the chocolate - add chocolate chips if you'd like

Example #2: Pumpkin Muffins #1

* 1 Box Spiced Cake Mix
* 1 Can Pumpkin

What to do:
* Same as previous directions
* Note: you can throw in some nuts or raisens if you'd like

Example #3: Pumpkin Muffins #2

* 1 Box Yellow Cake Mix
* 1 Can Pumpkin
* 1 Tsp Ground Cinnamon
* 1/2 Tsp Ground Nutmeg
* 1/4 Tsp Ground Cloves

What to do:
* Same as previous directions

Just A Thought: I'm guessing you can try all varieties of cake mixes, pumpkin & spices - just may take a little experimenting.

Suggestion: Aldi's has a really good deal on their cake mixes (under $1) and always in stock. Their canned pumpkin is inexpensive as well (again, always in stock from what I can tell). Two easy ingredients to always have on hand to whip-up some delicious & healthy muffins. Hope you enjoy as much as I did!
