Oven-Roasted Vegetables Recipe

2 Tbsp Veg or Olive Oil
1 Tbsp Lemon Juice
1/2 Tsp Roesemary or Thyme
1/4 Tsp Salt
1/2 Tsp Pepper
3 Cups Fresh Vegetables (like potatoes, broccoli, carrots & cauliflower)

What to do:
* Preheat oven to 450 degrees
*Mix oil, lemon juice, herbs, salt and pepper
*Spread veggies in a pan & coat with oil mixture
*Roast for 20 minutes - stir after the 1st 10 minutes of roasting
