Cajun Chicken Pasta

1 Stick Butter
Parsley & Basil (to taste)
5 Tbsp Extra Virgin Olive Oil
5 Cloves Garlic (minced)
1-2 lbs Chicken Breast Strips
Broccoli
Mushrooms
1/2 Cup White Wine
4 Tbsp Cajun Seasoning
1 1/2 Cup Whipping Cream
4 Tbsp Parmesan Cheese (grated)
5 Tbsp Asiago Cheese (shredded)
2 Boxes Whole Wheat Pasta (Ziti or Penne)

What to do:
* Cook pasta w/ dash of salt & olive oil, rinse and set aside
* Brown together butter, parsley, basil, olive oil, garlic & chicken strips
* Add broccoli & mushrooms and cook one minute
* Add white wine & Cajun seasoning and cook until the liquid evaporates
* Add whipping cream, parmesan & asiago cheeses and mix until rich & creamy (add more cream or cheese if necessary)
* Gently stir the cooked noodles into the creamy chicken sauce
* Serve immediately with salad & breadsticks
* Serves 10

* NOTE: If you decide not to use vegetables (broccoli & mushrooms), decrease the white wine to 1/4 cup
