1 Tbsp olive oil
1 small yellow onion (or green onion), chopped
3 garlic cloves, minced
1 cup long grain brown rice (not instant)
2-1-2 cups fat-free, low-sodium chicken broth
Salt & pepper, to taste
Directions:
* In a skillet, heat the oil over medium-heat. Add onion & garlic. Cook, stirring occasionally, until the onion is gold. About 5 minutes
* Add the rice & sauté for about 1 minute
* Add the broth, and season with the sale & pepper. Bring to a boil. Cover & reduce heat to simmer.
* Simmer until the rice is tender and most of the liquid is gone (around 45 minutes). Be sure to check the rice on occasion & add water if necessary.
* When the rice is done, uncover and let stand for about 5 minutes before serving.
NOTE: This rice will go wonderful with the grilled fish used in the fish taco recipe.
