Low Fat Lemon & Cinnamon Graham Dessert


It's been a long, long time since I've blogged. Lot's going on in life. Came across this recipe recently and thought I would share it. I made it late last night & it had to chill, so I'm so excited to have a piece tonight.....

6 whole cinnamon graham crackers (crushed)
2 tbsp. melted butter (I used Smart Balance instead)
1 can Fat Free sweetened & condensed milk
1/2 cup lemon juice
2 eggs
lemon zest (optional)

What to do:
* Preheat oven to 350 degrees
* Combine crushed grahams & butter
* Pat graham mixture into pie plate/refrigerate while making the rest
* Mix condensed milk, lemon juice & eggs until well combined/thickened
* Poor into pie plate
* Bake at 350 degrees for 15 minutes
* Cool & then keep chilled
