Healthy Artichoke and Spinach Dip

Ingredients
•1/2 can of Artichoke hearts drained
•2 cups of spinach chopped well
•1/2 can of White kidney beans
•3/4 cup 1% cottage cheese
•1 egg
•Sprinkling of Mozerella Cheses (Optional)

Instructions:
1) Crush white kidney beans with either a food processor or fork and place in large bowl
2) Cut up the Drained artichoke hearts and Spinach, add to bowl
3) Mix in cottage cheese and egg
4) Spread mixture in shallow oven save dish or bowl (also use pie plate) or pile on top of prepared veggie
5) Top with cheese (optional)
6) Bake at 400 degrees for 20-25 min, complete by broiling for 2-4 minutes to crisp top layer

Serve with baked pita chips, tortillas. You can also place this mixture on top of a sliced egg plant or portobello mushroom and bake.
