Healthified Roast Beef and Cheese


1 tablespoon German mustard (see note)
2 slices Ezekiel whole grain bread
1/2 wedge Laughing Cow Light Garlic and Herb cheese
2-1/2 ounces extra-lean, low-sodium sliced roast beef (if you prefer, substitute lean turkey or chicken for the beef)
2 slices medium red onion
Ground black pepper and salt substitute to taste

What to do:
Preheat a panini press to medium. Spread the mustard on 1 slice of bread and place the cheese on the other slice. Arrange the roast beef and onion between the slices of bread, seasoning as desired with pepper and salt substitute. Place the assembled sandwich on the press and cook for about 3 minutes, or until the bread is toasted and the sandwich is hot. Cut in half and serve immediately.

Note: German mustards come in several styles: mild, hot, sweet, and spicy.

Makes 1 sandwich
