"Biggest Loser" Sweet & Sour Chicken
I made this last night and it was fabulous.....
1 lb cubed chicken
1 Tbsp corn starch
1 Tsp garlic powder
¼ Tsp salt
¼ Tsp pepper
Sesame oil or Toasted Sesame oil
1 Cup green pepper (cut in strips)
1 Cup onion (cut in strips)
2 Tbsp minced fresh garlic
¼ cup LaChoy sweet & sour sauce
Cooked brown rice
* Mix corn starch, garlic powder, salt & pepper in large bowl. Add chicken & coat. Set-aside
* Heat skillet on med/high, add a tsp of sesame oil, peppers, onion & garlic. Cook until softened (4-6 minutes). Don’t let the garlic burn. Set-aside
* Heat skillet again med/high, add 1-2 tsp of sesame oil & chicken. Cook 2-3 minutes on each side until chicken is done
* Add veggies back with the chicken to heat. Stir in the sweet & sour sauce
* Serve over brown rice
* Makes 4 Servings
