Roasted Veggie Orzo Pasta


Serves 6

6 oz. fresh or frozen cauliflower
6 oz. fresh or frozen broccoli
1 medium yellow onion diced
Extra Virgin Olive Oil Spray
1 cup of whole grain orzo pasta (I used Rice Select Brand in this recipe)
salt and pepper to taste
1/4 cup Balsamic Vinegar
2 cloves of garlic minced
3 tablespoons Extra Virgin Olive Oil

What to do:
* Preheat oven to 400. Spray a large rimmed cookie sheet with olive oil spray. Spread out the cauliflower, broccoli and onion in an even layer. Sprinkle with salt and pepper and then spray the veggies with more olive oil spray. Roast in oven for about 20 minutes or until done to your preference.

* While veggies are cooking, cook pasta as per package instructions. Then whisk together the extra virgin olive oil, balsamic vinegar and garlic.

* When pasta is done and drained, toss together with the vinegar mix and veggies. Season with additional salt and pepper if needed. You could easily add in some grilled chicken, steak or pork and make this a one dish meal.
