Grilled Alaskan Salmon

Our neighbor recently took a trip to Alaska for salmon fishing.  He was gracious enough to share some of his fresh caught salmon with our family.  Last night I decided to cook it up on the grill.  I used a very simple recipe and I have to say it was the most AMAZING salmon I've ever tasted.  Here's that recipe:

Butter
Fresh Lemon Juice
Kosher or Sea Salt
Pepper

Directions: Start your grill.  Keep at the lowest temperature possible without the flame going out.

Melt the butter.  Brush on the butter, squeeze the lemon over all the salmon and then season with the salt & pepper.

Spray your grill with EVOO cooking spray.

Place salmon on the grill skin side down.

Cook until the salmon flakes all the way thru (no flipping).

Remove from grill.  The skin from the back will peel right off (discard).

Serve right off the grill with your favorite sides.

Salmon really is delicious if you can find good salmon and it's cooked just right.  COSTCO also has some really good Salmon (skin on) that can be used if you are not lucky enough to get the "real deal from Alaska".
