Eat Clean White Bean Chili


For those of you that have had my "fabulous" white chicken chili (which was posted a long time ago on my blog), you know that it is by far one of the best chili's you've ever tasted and also one of the most unhealthy. I get asked all the time for my recipe and we've also made it the annual main dish during our work holiday open house - people come each year just for the chili.

Again, I love the taste, but with today's eating plan I can't afford the calories. In an effort to stay on course and eat healthy, I searched for an eat clean white bean chili recipe and here is what I found from one of my favorite sites; "The Eat-Clean Diet" website:

This is a thick, hearty slow-cooker recipe.....

YIELD: 8 servings
PREPARATION TIME: 10 minutes
COOKING TIME: 9 hours 5 minutes

Ingredients:

• 1 lb dry great northern beans or white kidney beans, rinsed and picked over
• 4 cups low-sodium chicken broth
• 2 cups yellow onions, chopped
• 3 large cloves garlic, minced
• 2 tsp ground cumin
• 1 1/2 tsp dried oregano
• 1 tsp dried ground coriander
• 1/8 tsp ground cloves
• 1 x 4-oz can chopped green chilies
• 2 lbs boneless, skinless chicken or turkey breast (grilled/cooked and cubed)
• 1 tsp sea salt

Preparation:

1.Place beans in a soup kettle or Dutch oven. Add enough water to cover beans by two inches. Bring to a boil. Let boil for 5 minutes. Remove from heat and let stand covered for 1 hour. Drain and rinse. Discard liquid.
2.Place beans in a slow cooker. Add the chicken broth, onions, garlic and seasonings. Cover and cook on low heat for 7 hours or until beans are not quite tender. Add the chilies, chicken and sea salt. Cook for another hour until beans are tender.
