Baked Spicey Chicken Nuggets


Ingredients:

•2 chicken breasts, cut into 1 inch chunks
•1 egg
•1/2 c. milk like substance
•1/2 c. panko crumbs
•1/2 c. ground pecans
•2 T. low-fat parmesan cheese
•1/4 t. cayenne
•1/4 t. chile powder
•1/2 t. garlic powder
•ground black pepper, to taste

Instructions:

1. Have your chicken cut up so you're ready for dipping. Have a cookie sheet lined with tin foil and lightly sprayed with OO spray. Preheat overn to 375.
2. In a bowl, combine the egg and milk. Whisk it.
3. In a baggy combine the rest of the ingredients (except the chicken) and shake. Empty onto a plate.
4. Put all the chicken chunks into the egg mixture and stir to coat.
5. One piece at a time, roll chicken pieces in the panko mix and then place on your greased cookie sheet.
6. Bake for 20 minutes or so. No need to flip, unless you want to.
